I was there not too long ago. Now, with trying out all my new kitchen tools, I am experimenting with all things food. And it's so much fun! (again!)I will email one of our favorites to you...

Okay, Lees....I'm always having this problem here as well, so I'll be checking back to see what people suggest. Here is one of our favorite dinner ideas that I got from MJ: Sandwich Bar. I have a platter full of fresh veggies for putting on sandwiches (tomato, cuke, shredded carrot, onion, basil, shredded lettuce), a plate full of cheeses and meats, fresh hoagie buns/mini french breads from Sam's Club or Costco and veggies and dip and chips. Sometimes I'll do a special spread for Zuddy and me (like whipped horseradish) or I'll use the ol' Geo. Foreman grill and make paninis with the sandwiches. This dinner gets a startling amount of veggies into the Noodle and it's her top dinner pick. She doesn't even end up eating many chips (sometimes I 'forget' the chips until she's halfway done eating. Because I'm all sneaky like that). But she loves deciding what she's going to put on her sandwich.

Our easy all-time favorite meat loaf: 1lb ground beef, 10 Ritz crackers crumbled, 1 small onion diced, several squirts of Worchestershire sauce, 1 egg. Make it into a loaf, place in greased casserole dish. Mix 1 cup ketchup with generous amount of Worchestershire sauce (about 4-5 Tsp) and spread over loaf. Wrap baking potatoes in aluminum foil and pierce with small skewers to accelerate cooking time. Place everything in 350 degree oven (convection if you have it). Bake for 45 min- 1hr. EAT!
This is our default "can't think of anything and don't feel like a lot of work" dinner. We've gotten lots of compliments from friends and family. Makes a good meat loaf sandwich or microwave meal if there are leftovers. Karin

Well I say ALWAYS meal plan. I sit down every Sunday and plan out my meals for the week (with the help of pinterest and allrecipes.com) It takes a huge weight off my shoulders when dinner time comes rolling around (the most dreaded time of the day!) Also I use a TON of whole roasted chickens. You can turn them into just about anything!

Pinterest is my -go to- for dinner ideas! We made grilled eggplant with tomato, feta and basil last night. Delicious and under $10.00 (easily feeding 4-5). That left enough spare money for a bottle of white wine. :)
